Kale Chips
I remember the first time I ever tried Kale. I had just moved to Joshua Tree California from out east. Fresh out of college and my food knowledge for the past 5 years had existed of college style pizza, mac and cheese and ice cream. I was on my first outdoor ed gig, working for an experiential education company. Already in cultural shock from how different everything was…I had dived straight into Dr. Seuss magical desert of abstract natural forms to abstract desert dwellers!!!
Me and two other girls hit the grocery store before driving off into the almost middle of nowhere for the week. One asks what should we make for dinner. The other says Kale, coconut curry. I remember thinking to myself what and what. One of the girls asked me to get a bundle of kale…and I had to ask, what is kale?
I got a look of “oh my gosh you’ve never heard of kale, you are going to love it!”
I ended up loving the curry and I try to eat as much Kale and Chard as possible these days!!!! Not to mention dark leafy greens like Kale and Chard are nutritional powerhouses, rich in vitamins and minerals, along with phytonutrients. An added bonus Kale and Chard, grow with great ease and little attention in Idaho, and tolerate cold weather/frosts well. My recent endeavor has been Kale chips.
Kale Chips
1 bundle of kale, rinsed and dried
Spread: thin on cookie sheet
Sprinkle: with 1-2 teaspoons of olive oil
Sprinkle: with your favorite seasonings
Examples: seasoned salt, cumin, curry powder, red pepper, nutritional yeast!!!!
Bake: until crispy 300 degrees 15-25 minutes
Try: grinding up some and using it as a spice on food, popcorn or salads
