Coconut Peanut Sauce
There are at least 10 ways I’ve made peanut sauce for various dishes, from gado-gado, to a dipping sauce for salad rolls. See my post on Summer Salad rolls with video’s on additional recipes for peanut sauce.
Coconut Peanut Sauce
Another twist from the video in Summer Salad Rolls: Use more or less broth to make this sauce as thick or thin as you like. For a twist try adding coconut flavor in your peanut sauce, add a teaspoon of coconut extract instead of coconut milk.
- 1/4-1/2 cup light or regular peanut butter
- 3 Tbsp. soy sauce
- 2 Tbsp. brown sugar or honey
- 2 Tbsp. rice vinegar or lime juice
- 1-2 cloves garlic, crushed
- 1-2 tsp. grated fresh ginger
- 1 tsp. sesame oil (optional)
- 1/4 – 1/2 tsp. gluten free curry paste (optional)
Combine all the ingredients in a small sauce pan. Allow ingredients to absorb and peanut sauce to thin, trying adding water if too thick.
