Gluten Free Granola Bars

An image of Chewy, chocolate chip, Quaker granola bars is the first thing that pops into my head when I think of granola bars.  The second is Sunbelt’s delicious flavors from chocolate dipped, to oats and honey.  Granola bars have been a staple to my quick, on the go lifestyle 24/7.  Having a gluten intolerance and not being able to eat granola bars is kind of a pain.  Though, their are some great brands out there for allergen free granola and protein bars, none are the same as a gluten filled classic granola bar.

I’ve decided to go on a mission over the next couple of months to find the perfect homemade gluten and dairy free granola bar!!!  My first batch turned out not bad considering the experimentation.  Its a great start but these bars definitely need some work and TLC.  I derived the frankenstein granola bar from what I had laying around in my kitchen.  My first goal is to make a granola bar that will stay soft and chewy in the sub zero temperatures of Idaho!!!

Gluten Free Granola Bars:  Take 1

Mix the dry ingredients 1st:

1/3 C quinoa flakes

2 C gluten free oats

1/3 C coconut flower

2/3 C brown rice flower

1/4 C flax meal

1 T cinnamon

1/2 T all spice

1/2 C dried fruit

3/4 C raisins

1/2 C walnuts

1 C mix of nuts and seeds

(Sunflower seeds, pumpkin seeds, sliced almonds, whole almonds, cashews)

optional 1/4 C coconut

1/2 C vegan chocolate chips

Add liquid ingredients:

1/2 C Agave, or Honey

1 C applesauce

3/4 C goji berry juice, or apple juice

1t vanilla

Mix well, spread onto greased baking sheet

Bake at 375 for 30 minutes

let cool and slice
