Yam Stuffed Mushrooms



Simply de-stem and wash a package of whole baby bella mushrooms.  Stuff with smashed yams (in this recipe I used onions garlic, peppers, and scallions).  If you would like protein in the stuffed mushrooms, add ground turkey to the smashed yams before stuffing the mushrooms  Bake for ~ 15-18 minutes at 350 degrees.  Top with goat cheese (if you can have cheese)
