Southwestern Polenta

Mexican meets Italian breakfast dish!!!! I’ve noticed that I have been eating a lot of rice, beans and veggies and also Spanish and Mexican influenced foods since becoming gluten free.  This Southwestern Polenta delight is one of my breakfast favorites!

Smear Re-fried Black beans onto plate

Top with kohlrabi, kale, or your choice of greens

Pan fry polenta and place on top of greens and blackbeans

Fry two eggs (my preference sunny side up) place on top of Polenta

Top with salsa, tomatoes, black bean, and gluten free salsa Verde

Garnish with fresh cilantro from the garden
