Salmon Stuffed Avacado

Though Avocado is slightly out of season here in the mountains, it is still available.  I’ve never been a fan of avocado by itself.  However mashed, in smoothies and stuffed brings a whole new light to me and opportunities with the food in my diet.

 

This stuffed avocado recipe is so easy and quick that I started stuffing Avocado’s with everything this summer, from southwest chicken to bean dips for chips and salsa!!!

 

 

Cut Avocado in half and de-pit

Dice up cooked fish salmon or white fish and place in Avocado

Squeeze fresh lemon over top

Top with diced tomato, peppers, and herbs

Add a side salad or quinoa salad for a complete meal

Try blending up olive oil and basil to make a pesto oil to drizzle over top
