Rudi’s Recipe Contest

I’ve officially entered the Rudi’s Gluten Free Recipe Contest.  It’s turned into quite the Facebook popularity contest.  Anyone and everyone can vote 1/day until June 6th.  I have quite the catching up to do.  So the more support on this one the better.  I would love for everyone I know to vote for my recipe 1/day for the next 16 days.

The top ten winners are based off of facebook votes!!!! I would love to be in the top 10:) So vote fore me!!!!  Plus every time you vote, you get entered into a drawing to win something too!!!

 

How to Vote:

Log into Facebook.  Search Rudi’s Gluten Free Bakery, go to the contest page and select Rudilicious Pumpkin Chocolate Chip Cannolis.  Click on Vote, you can do this once a day for the next 16 days!!!

 

Rudilicious Pumpkin Chocolate Chip Cannoli’s

Ingredients:

This recipe is Gluten and Dairy Free

  • 3 pieces of Rudi’s Gluten Free Bread (regular or cinnamon raisin)
  • 2 Eggs
  • Cinnamon, Brown Sugar
  • Fresh or Canned Pumpkin
  • Dairy Free Cream Cheese
  • Allergy Free Chocolate Chips

Chocolate Frosting:
Use your favorite frosting mix (Try Pamela’s gluten and dairy free chocolate frosting) or, try this homemade one!!!

  • Dash of Sea Salt
  • 1/8th Cup raw cocoa dark chocolate
  • 1/8th cup regular raw cocoa
  • (or try raw cocoa nibs as a substitute)
  • 1/2 Avacado (or banana)
  • 1/4-1/2 cup chopped dates
  • 1 vanilla bean scraped
  • Add a handful of chocolate chips for a chunky chocolate deliciousness:)

Preparation Instructions:

1. Take Rudi’s bread and flatten out by rolling it out like a dough, make it nice and thin.
2. Mix 2 eggs, cinnamon and brown sugar in a bowl
3. Dip Rudi’s bread into egg mixture
4. Fry Rudi’s “french toast” in frying pan until golden brown on each side
5. Spread chocolate frosting onto thin french toast
6. Load up middle with pumpkin and dairy free cream cheese
7. Add chocolate chips if not in frosting already
8. Sprinkle more chocolate chips (sprinkle while still hot so the chocolate chips get all gooey and delicious and powdered sugar over top
9. Garnish with berries and mint
10. Rudilicious Deliciousness…Dig in and enjoy:)

Frosting:
Follow instructions on favorite bagged mix
or take frosting ingredients from above and put in food processor, blend until creamy and smooth…ummm delicious!!!
