Raspberry Swirl Chia Pudding

I truly enjoyed this recipe today, and found it to be absolutely fulfilling for a quick snack in my car while driving.  Sometimes I just don’t have time to stop and eat, and I suspect for many of those in this fitness challenge that time and food are a crunch for you as well.  This is a great snack because you get carbs, proteins and a healthy fat!!!

 

Step 1: Mix 3 Tablespoons Chia Seed with 1/2 Cup of Almond Milk

 

Step 2: Stir in 1 scoop Vanilla Protein Powder

Step 3: Let sit for about 30 minutes

Step 4: Assemble:  Add 1 dollop of Raw nut Butter (I used Smuckers Natural Peanut Butter)

 

Step 5: Top with 1/8th of  Cup of Raspberries and 1 Tbsp Cocoa Nibs

    I tried this with flax milk since I can’t have almond milk. I also threw in a little coco powder. YUMMY!
