Quinoa Yam Burgers

 

Quinoa Yam Patty’s

?2 cups cooked quinoa

1/2 cooked large yam smashed

1/4 cup shredded carrots

1/2 diced shallot (sautee)

1/2 diced pepper  (sautee)

1/2 bundle green onions chopped

 

Directions:

- Mash yams first

- Add sauteed shallot, pepper, carrots and green onion

-  Mix in quinoa

- Spice with chili, curry and cumin powder, and a pinch of salt

-  If too dry add 1 egg or 2 egg whites (to make vegan mix 1 Tbsp flax w/3 Tbsp warm water)

(You can use a food processor but it may make this recipe too liquidy…try hand mixing first to form patty’s)
