Gluten Free Egg McMuffin’s

When I hear the word McMuffin I think about the greasy delicious McDonald’s classic breakfast sandwich that has more meat flavoring in the bun then in the meat itself…. oh how it tastes delicious!!!

If you miss a luxury gut bomb of a breakfast treat, this gluten free creation just might hit the spot for you.  I love these gluten free egg muffin’s for breakfast because they are quick and easy, and you can make a whole batch to last you through your busy mornings.


Gluten Free Egg McMuffins

-  6 Egg whites

- Diced veggies (anything you want)

-  I used onion, pepper, mushrooms, and zucchini

-  1 lb.  of ground beef, pork or turkey

(I use beef, and or pork from a local farm that is additive, and hormone free, and the animals are loved for!!!)

-1 tsp gluten free baking soda

-  1/2 a cup of gluten free flour (i used fresh ground almond flour)

*To grind almond flour at home you can use a coffee grounder*

Just toss in one handful of almonds and grind until you have almond flour

Bake on 350 for 30 ish minutes or until the tops are turning golden.


Pair with a side salad or sweet potato frys…Yumm!!! These are so great for on the go breakfast, lunch dinner or a snack.

Try adding seasoning to the muffins, salt, pepper, turmeric, curry powder, cumin, chili powder are all fun ones to play around with for flavoring.  (Maybe not all together!!!!)
