Carrot Ginger Soup- GF & DF

I went on a hike recently with a friend and she was talking about a Carrot Ginger Soup she had the other day.  It sounded fabulous so I attempted to make it.  I have never really made anything besides a potato soup before, but how hard could it be?  I used the ingredients that I remembered from her, and looked up a few various recipes online.

Carrot Ginger Soup

sautee 1/2 yellow onion

4 cloves of crushed garlic

1 box of gluten free chicken or vegetable stock

1/2 cup of almond milk

2 tbsp of olive oil

1 dash of Apple Cider Vinegar

1/2 squeezed lime

1 ginger

Add Salt, pepper, Cumin, Curry Powder, and Chili Powder to taste

1)  Sautee onions, garlic and olive oil until transparent

2)  Peel and chop carrots

3)  Add stock and carrots, onions, and garlic, and grate ginger into large pot

4)  Let simmer until carrots are soft enough to blend

5)  1/2 cup chopped pineapple

6)  Add spices and salt and pepper

7)  Let cool

8)  Blend soup in portions until smooth and creamy

9)  Try 1 1/2 cups of orange juice for a twist

Serve cold or hot, add cilantro for garnish and an olive oil drizzle

or try basil and shredded coconut for a garnish!
