Gluten Free/DF Apple Cranberry Crisp

I was recently scrolling through the web for holiday pies, and I came across a gluten free apple cranberry crisp by blogger Two peas and their pod. Check out the recipe and their site here. I made a few modifications to the recipe, and it turned out delicious!!!

Apple Cranberry Filling

4-6 large Granny Smith apples – peeled, cored, and chopped
1 1/4 cups cranberries, fresh or frozen
1/4 cup granulated sugar
1/2 a lemon zest
3 tablespoons fresh lemon juice

Mix contents in a bowl, and then put into baking dish

Apple Crisp Topping

(I actually ended up doubling the topping recipe, I love lots of crumble topping and this wasn’t quite enough)

1 1/4 cup Gluten-Free Oats x2
1/4 cup Gluten-Free All-Purpose Baking Flour x2
3 teaspoons ground cinnamon x 2
1/2 teaspoon all spice x 2
1/2 cup packed light brown sugar x 2
1 tablespoon honey x2
6 tablespoons cold butter, cut into pieces x 2

Mix together ingredients with hands and then crumble topping over apple cranberry filling

Bake at 350 degrees for 40 minutes
