GF Chicken Poppers

I work with kids several days/week and one thing I miss most about food is chicken tenders and french frys…especially when you have 5 kids around you eating it!!!

Therefor I strived to find a way to come up with my own “healthy” gluten free version of this!  I tried everything from chex mix, to various flours like rice, quinoa, millet and teff, to crushed Frito’s.  Now I have to say the crushed Frito’s were the best tasting and texture.  Then again, its worth experimentation for what works best for you!!!  Even try making your own gluten free bread crumbs from a gluten free bread to coat the chicken poppers in.

Gluten Free Chicken Poppers

Ingredients:

  • 1 large bowl of crushed corn chips (try mixing Frito’s and Chex Mix)
  • 1 bowl of three eggs beaten add salt and pepper
  • 1 lb. chicken

Preperation:

  • Wash and chop chicken into small chunks “chicken popper size!”
  • Dip chicken pieces into egg and then crushed corn chip mixture
  • Place on greased baking sheet
  • Bake at 350 degrees for approx 45 minutes or until done

These chicken poppers store great and can be re-warmed by frying in a frying pan with olive oil for extra crispiness.  Try pairing with sweet potato frys, apple chips, or soup like cauliflower fennel soup!!!

 

Delicious Honey Dijon Dipping Sauce

  • 1/2 C. dairy free mayo
  • 2 -3 Tbsp. Dijon Mustard
  • 2 Tbsp Honey
  • Squeeze of fresh lemon juice

Try this dipping sauce on an excellent cabbage appetizer!!!
