Fennel Kumquat Quinoa Salad

OK, so that one is a mouth full!  I love using quinoa in place of my grains.  It is high in protein and sits better in my digestive track.  Plus quinoa is SO versatile.  Kumquat…random but awesome, I was walking through the produce section in the grocery store, and thought I’ve always wanted to do something with Kumquats, lets try it!


1 cup of cooked quinoa

1/2 yam or sweet potato diced ,1/2 red pepper diced (sautee until tender)

5 kumquats thinly sliced

a few Tbsp. of fresh fennel

1 Tbsp. olive oil

1 splash of Red Wine Vinegar (less then a tsp.)

a pinch of salt and pepper

Don’t forget to add your protein- grilled chicken or sliced boiled egg whites go great with this:)
