Dandelion Herb Omelet

Egg whites really seem SO BORING to me…I’m not going to lie…. I am a sunny side egg type of girl, give me the salt and cholesterol.  However, seeing that this is a fitness challenge no more ewwwweeeyyy gooooey egg yolk deliciousness lick it up with your gluten free toast, at least not this month.

If i’m going to eat a million egg whites, someone really has to sell it for me and dress it up with some diamonds or a bribe, or maybe even a little hidden treasure that makes it taste delicious.  So my goal is to see how many egg white recipes I can come up with this month!  Day 3 is a Dandelion herbomelet.



Dandelion Herb Omelet

1 cup chopped dandelion greens

4 or 5 egg whites

1 clove diced garlic

Top with 2 Tbsp. fresh salsa

Tip: I like to cook my garlic and greens first and then fill the omelet

side note: I do not use any butter, or dairy free butter, I use a splash of olive oil spray in the pan
