Crunchy Mochi Crouton Salad

Mochi is one of my favorite gluten free treats!!!  Mochi is a Japanese rice cake, free of additives and preservatives, and all natural.  When baked it lofts up into little puff pastry’s.  If over baked they turn crunchy like croutons… YUMMM :)

This afternoon I over cooked them and used the Mochi as crunchy croutons in my salad.  It was so delicious.  Mochi tends to be slightly on the sweet side, so it pairs extremely well with the tangy flavor of balsamic vinegar with a little drizzle of olive oil.

 

 

Mochi Crouton Salad

Swiss Chard

Beet Greens

Finely diced swiss chard and beet green stems

extra crispy mochi

clover sprouts

drizzled with balsamic vinegar and olive oil
