Coconut Flour Pancakes

Bob’s Red Mill products have become one of my favorites since becoming gluten free.  Especially the organic coconut flour.  It makes great pancakes and Vegan coconut walnut cookies…..ummm yummy.

You can substitute up to 20 percent of flour in a recipe with Coconut Flour!!! I like to use a brown rice flour for the rest of the pancake recipe and some potato starch.

Coconut Flour Pancakes:

Bob’s Red Mill Recipe(with modifications)

1 cup brown rice flour

1/3 cup coconut flour

2 Tbsp. potato starch

1 Tbsp. baking powder

1Tbsp. sugar

2 Tbsp olive oil

2 Eggs or egg substitute

1  1/2 cup Almond or rice milk

Top with walnuts and organic dairy free butter, side with turkey sausage and top with Blue Agave Syrup…. sprinkle some coconut shavings over top and you have yourself a great gluten and dairy free breakfast!!!
