Chili Lime Chicken with Kale and Yams

This can be a one pot meal or easily made in about 30 minutes, and just add rice as a side.  My sister calls this Indian food…. It’s the first time I think she has ever tasted spice…. I can’t wait to blow her mind with some authentic Indian Food later this summer.

 

Chili Lime Marinade

I like using this marinade on any chicken that is going to go in a curry dish or a southwestern style dish.

Simply Marinade the chicken for a minimum of 1 hour or overnight with 1/2 a fresh squeezed lime, 2 cloves crushed garlic Chili, Curry and Cumin Powder (sprinkle enough until chicken is lightly coated)

Tip: Try stabbing your chicken with a fork (all over) during the marinade process to help as a tenderizer and allow the flavor to absorb

Bake chicken at 350 fpr approx 30-45 minutes (depending on cut of chicken and how you like it cooked)

 

Curried Kale and Yams

This is a simple one pot meal, which I LOVE using my cast iron skillet for.  Always put the harder or firmer ingredients in first and softer ones last.

Start: with a diced onions and clove of garlic in oil, once they soften,

Add: 1 Diced yam or sweet potato

Finish: with 3-5 handfuls of Kale and 1 cup mushrooms

Add spice, cumin, curry, chili powder, and salt and pepper to taste
