Cabbage Crocante
Winter salad’s, spinach, and Mexican influenced food all make me think of cabbage, and what I could possibly do with cabbage. I thought of all the endless possibilities, shredded on chili or the Montana Griddle, in a soup, or thai food. Then while thinking about how much I miss crunchy salty snacks I came up with this wonderful creation. Which all led me to the perfect crunchy snack and appetizer for a party or bbq!!!
Cabbage Crocante
Ingredients:
- 1/2 of a red or green cabbage
- homemade salsa, try pepper mixture, or (if in a hurry canned salsa could work too)
- homemade honey dijon
- browned turkey burger or elk burger, or try canned tuna
Sautee:
Saute turkey or elk meet in a skillet. Spice and season by choice. Turkey burger I liked to add crushed garlic, cumin, curry powder, red pepper,and garlic salt). Elk meat I enjoy leaving as is while browning, it already has great flavor.
Cabbage:
Wash and chop cabbage into small wedges.
Salsa:
Try making your own homemade salsa, or this pepper mixture:
4 very finally chopped tomato’s, 1/2 small yellow pepper, 1 small red pepper (or use green), 1 small yellow jalapeno, 1 small Serrano, 2 cloves crushed garlic, a splash of apple cider vinegar, 1/2 fresh squeezed lemon, 1/2 l fresh squeezed lime. Spice up with a few drops of tobassco, red pepper, chili powder, cumin, and curry powder. I like to make mine extra spicey and just use a dollop on top of the cabbage concoction.
Combine:
Display cabbage on a plate. Dollop honey dijon onto cabbage. Place turkey meat on top. Sprinkle with homemade salsa or pepper mixture.
