Baby Bok Choy Breakfast
San Fran is absolutely stunning in a casual relaxed way, and the views outstanding from where I am staying, all except the view of my kitchen. I am totally missing my beautiful granite top kitchen with wrap around surfaces to sprawl out my ideas onto and make into my canvas. The mini stove and mini fridge is far from what I am use to but you have to work with what you have. After 4 days of no cooking I was over it, I needed to make myself something to feel a little better about myself and food!
The first grocery store I found in town was a Trader Joe’s. The prices were fare, selection was slightly limited, but as long as I had some greens, eggs, veggies and fruit I knew I would be alright! Which is how my baby bok choy breakfast came about. The great thing about this breakfast is that it doesn’t need much space, prep and is quick and easy.
Directions:
Slice: half an onion into thin half moons
Mince: 2 cloves garlic
Sautee: onions and garlic until translucent
Wash and Chop: 2 baby bok choy’s, sautee until softened
Add: a handful of cherry tomato’s halved and a large handful of basil
Sautee: for a minute or two longer
Serve: with eggs of your choice and smoked salmon
