Muscles & Coconut Ginger Curry


The search for this recipe was inspired by leftovers in the fridge, and left overs from La Trappe.  I took the broth that the muscles were cooked in, added some baby bok choy, tomato’s and garnished with basil.  Serve with rice or quinoa.  It was delicious!  I am a huge fan of taking small parts of mine or other peoples left overs and turning it into a new masterpiece of soothing food.
